Kashmiri Mutton Rogan Josh
Kashmiri Mutton Rogan Josh Kashmiri Rogan Josh It is a Kashmiri style Meat Curry made with spices like fennel seeds and dry ginger. Spicy, loaded with yummy flavors this is a perfect easy to make curry to mop with steam rice or some yummy loaf of bread A delicious flavourful Lamb curry that comes from Persian origin. It is the signature dish of Kashmir, where the name is derived from Persian words in which Rogan meals oil and Josh mean Intense heat.


Ingredients
• 1 Kilogram Mutton , with bones, cut into medium pieces
• 1 cup Curd (Dahi / Yogurt)
• Salt , as required
• Mustard oil , as required
• For whole spices
• 2 Black cardamom (Badi Elaichi)
• 6 Cardamom (Elaichi) Pods/Seeds
• 2 Bay leaf (tej patta)
• 1/2 inch Ratan jot (alkanet) , (infuse it in heated ghee)
• 1 teaspoon sauth powder
• 1 teaspoon Fennel Powder
• 1/2 teaspoon Asafoetida (hing) melted in water
• 2 teaspoons Kashmiri Red Chilli Powder
• 1 teaspoon turmeric
• 1 teaspoon jeera
• 1 var ki tikki
• 2 medium size onion fried (barista), garlic and ginger fried
Directions for Kashmiri Rogan Josh Recipe - Mutton in Red Curry
1. To begin making the Kashmiri Rogan Josh recipe, wash mutton nicely and drain water completely.
2. Make a paste of fried onion , ginger and garlic in grinder.
3. Heat mustard oil in pressure cooker wait till the smoke comes and add bay leaf and other whole spices mentioned.
4. Immediately, add hing water and mutton and mix well. Fry on medium to high flames stirring occasionally.
5. Stir it till water comes out from it and changes it colour, now make a paste of var ki tikki with other powder spices with the curd and a little amount of water and whisk nicely.
6. Add the fried onion oil and mix the masala paste to it. Mix it nicely for few minutes.
7. Add the fried onion, ginger and garlic paste into it.
8. Add garam masala powder and wait till the boil comes. Close the lid and pressure cook it till soft and tender.
9. Now add Ratan Jot / root infused in ghee in the mutton.
10. Serve Kashmiri Rogan Josh with steam rice or Naan.
